Great Kitchens of Manhattan - Minimester 2018

Instructors: Dr. Andrew Weller and Leora Kalikow

Everyone loves a great meal and there is no better city in the world for dining out than New York! But do you know what it takes to prepare and serve 500 four course meals an evening, every evening? Twelve 8th graders found out by spending every morning of Minimester in a different Manhattan restaurant or food establishment seeing how the kitchen and the 'house' get ready to execute the day. They learned about project management, food prep and cooking, and execution of customer service and guest experience at the highest levels.

Seeing Things Pastry Project - Minimester 2018

In this minimester course, taught annually by Avenues Global Creative Director Andy Clayman, students are introduced to new ways to think about thinking, and meeting other creative people who do the same.

This year, students met Susan Hochbaum, Senior Designer for Avenues. Ms. Hochbaum discussed her book "Pastry Paris," where she made a visual connection between the architecture of Paris and the pastries the city is famous for.

Students were give one pastry which they photographed to match the angle and feel of the pastry. The results of the day's efforts are documented below.

French Pastry Comparison - 2017

By The Seeing Things Minimester Class

In this minimester course, taught by Avenues Global Creative Director Andy Clayman, students are introduced to new ways to think about thinking, and meeting other creative people who do the same.

Avenues Senior Designer Susan Hochbaum (the Avenues Globe Book and virtually all of Avenues identity) brought her collection of photographs from her year in Paris where she was inspired by the connection between French pastries and Parisian architecture. Working from her book, Pastry Paris, Avenues middle-grade students took out their cameras to develop their own connection between pastry and elements of the city where "art and beauty can be found in everything from doorknobs to petit fours."

The goal of Minimester is to expose students to topics and experiences the ordinary schedule doesn’t allow.
